– 2 multigrain sandwich thins
– 4 teaspoons olive oil
– 1 tablespoon snipped fresh rosemary
– 2 eggs
– 2 cups of fresh baby spinach leaves
– 1 medium tomato, cut into thin slices
– 2 tablespoons of fat reduced-feta cheese
– kosher salt
– black pepper
– 4 pieces of tomatoes.
Preheat the oven to 375f. Apply the olive oil on the cut side of 2 multigrain sandwich thins. Place them inside the oven and toast until the edges become light brown and crisp. Then heat two tablespoons of olive and the rosemary in a large skillet. Then cook two eggs, ones at a time, to white set. But yolks must still be running. Break the yolk with a spatula.
